Growing Microgreens & their Benefits

Microgreens are young vegetable greens and are classed as a ‘superfood,’ and are sometimes called ‘vegetable confetti’ due to the various vibrant shades of colour which they come in.  They contain high levels of vitamins, nutrients, minerals and antioxidants. They have an intense flavour (and a lot of people who have never tried microgreens before, do not really how the addition of a few can make a salad so tasty and flavourful) which makes them perfect to adding to fine dining dishes in restaurants.  Many people also don’t realise that they have a much higher concentrated nutrient content than ordinary vegetables which makes them perfect for those into healthy eating.  Some research has even shown that nutrient levels in microgreens can be up to nine times higher than those found in mature greens.

A recent article in Bicycling in February 2022 discussed how according to the U.S. Library of National Medicine, ‘some microgreens could contain four to six times more vitamins and antioxidants than their grownup counterparts.’  To read the full article, click here.

A 2020 study published in the Journal of Food Composition and Analysis found that microgreens are rich sources of the antioxidants vitamin C and vitamin E — which is used by your body to support the immune system.  In addition, according to a 2018 review published in the Journal of Agricultural & Food Chemistry, most microgreens are an excellent source of beta-carotene.
